San Choy Bau

San Choy Bau:
Delicious healthy San Choy Bau for that quick weeknight dinner.
Ingredients:
500g chicken mince2cm knob of fresh ginger

2 cloves garlic

2 kaffir lime leaves

1/4 lemon peeled

1 tbl sweet chilli sauce

4 tbl soy sauce

2 tsp fish sauce

1 tbl olive oil

2 cups of finely diced vegetables of choice (I added mushrooms, broccoli, zucchini, and carrots and put in blended until diced)

 

Method:

Blend all ingredients at high speed until almost a paste, or atleast ingredients finely diced. Add to hot pan with chicken mince. Fry until cooked, add water or more soy sauce if dry. Add vegetables and cook.

Serve in lettuce leaves or with brown rice vermicelli noodles with chopped roasted nuts on top.
