This is a delicious Raw Caramel Slice that I created when I needed a sweet treat but didn’t want anything really sweet. Often the recipes call for 1-2 cups of dates which I find a lot, so here is a recipe I made up that is just the right sweetness. Enjoy
Base
- 4 dates (boil in ½ cup water)
- ½ cup raw almonds
- Pinch of cinnamon
- ½ cup walnuts
- 1 tsp coconut oil (melted)
- 2 tbls tahini
Caramel
- 4 dates (boil in ½ cup water)
- ½ cup coconut oil (melted)
- 1 tbls tahini
- ¼ cup maple syrup or honey
- 1 cup raw cashews (soaked and rinsed)
- 1/3 cup water
Chocolate layer
- ¼ cup coconut oil (melted)
- ¼ cup maple syrup or honey
- ¼ cup raw cacao powder
- Pinch salt
Method – Base
- Put all the Base ingredients into the blender
- Pulse ingredients on High speed until it is a fine crumb like mixture and sticks together easily.
- Mould the mixture into a tin lined with greaseproof paper.
- Place in the freezer to set for 1 hour.
Method – Caramel
- Put all the Caramel ingredients into the blender and blend on high.
- If you need to, add a little bit of water.
- Pour the caramel mixture on top of the base and return it to the freezer for 1 hour or until set.
Method – Chocolate Layer
- Add all ingredients and whisk until nice and smooth.
- Spread the chocolate sauce on top of the caramel layer
- Place it back in the freezer for an hour and then remove from the tin, slice and serve!
