Vanilla Almond Bar

Last week I went to a Paleo sweet treats cooking demonstration with Hayley Lewis and Lee Everett (paleo chef at Paleo cafe paddington) – this is one of the recipes we came home with, and got to taste while we were there – its super easy and super yummy. Enjoy!

1 cup almonds
1 cup coconut flakes
3 tbls maple syrup
3 tbls coconut oil
1 vanilla bean
1/2-3/4 tsp sea salt flakes
1 cup soaked dates
1/4 cup sesame seeds
1/3 cup sunflower seeds

– place all ingredients in food processor
– blend till coarse
– press in to a lined container and chill till firm
– once firm tip out and cut in to desired pieces
