Spinach & Ricotta Canelloni

Looking for a healthy lunch option that is a little more exciting now the weather is cooling down? Or a quick healthy dinner option that literally takes 10 minutes to prepare? Well here it is, its super easy and delicious!

1 tub light Ricotta

1 box frozen spinach

1 packet of Canelloni pasta tubes

1 tin diced tomatoes or chopped fresh tomatoes

 

Mix spinach and ricotta. Spoon in to Canelloni tubes and lay flat in a baking dish. Pour tomatoes over the top and cover with aluminium foil. Bake in oven at 180degrees for 30 minutes. Remove foil and bake for a further 15 minutes. Enjoy with a big hearty salad!
