Whole Orange & Carrot Cake

This cake is delicious served straight from the oven, or with a little greek yoghurt on the side as a desert. Expect a moist, fresh healthy tasting orange cake!

 

  • 2 carrots, quartered
  • 1 orange, quartered
  • 1/2 cup honey or maple syrup
  • 1/2 cup coconut flour
  • 50grams melted coconut oil
  • 4 eggs
  • 1 teaspoon bicarb soda

Preheat oven to 175degrees. Line baking tin

– In your blender or food processor, chop the carots and orange until very fine, add the remaining ingredients, mix well. Spoon in to the prepared pan and level the top

– Bake for 45 minutes, cover with foil and bake for an additional 5 minutes. The cake should be golden on top and an inserted skewer will come out cleanly

– allow cake to cook in pan before gently flipping on to a cooling rack. Eat on its own or serve with greek yoghurt warm for a desert.
